The ingredients you will require are, 

  • For the base
  1. 1 ½ cup of walnuts
  2. ½ teaspoon of salt
  3. 1 ½ cups of dates
  4. ½ cocoa powder
  • For the layer
  1. ½ cup of brown rice syrup
  2. 2 cups of shredded unsweetened coconut
  • For topping
  1. a cup of 70% dark chocolate

So, to start preparing, you need an 8×8 inch pan. Now, line it with parchment paper and keep it aside. 

Take a food processor for blending cocoa powder, walnuts, salt, and dates. Blend it until you have a thick dough. 

Use your hand to press this prepared layer in the pan until it is flat. When done, keep the pan in the refrigerator. 

Take the food processor to blend brown rice syrup and coconut. Pour this coconut layer over the prepared base. Use your spatula to even it out and place the pan in the refrigerator. 

It is time to melt the dark chocolate. Please place it in a microwave-safe bowl and microwave it till the chocolate melts at low heat. Check it every 30 seconds to make sure it doesn’t burn. After thawing, please remove it from the pan and pour it over the coconut base. Refrigerate it for 30 seconds and then take out. Slice and serve cold.

Here’s what you are going to need to prepare this coconut vegan dessert recipe.  

  • A cup of shredded coconut
  • 4-6 tablespoons of unsweetened cacao powder
  • ½ cup of almond flour
  • 3-4 tablespoons of melted coconut oil
  • 4 tablespoons of maple syrup
  • 2 large pinches of sea salt
  • ½ teaspoon of pure vanilla extract

After you have gathered all the ingredients, your first step is to combine the almond flour, shredded coconut, maple syrup, cacao powder, salt, and vanilla extract in the food processor. Blend it well until it is combined. 

Now use a measuring spoon or a cookie scoop for scooping the dough into small portions of macaroon. Take a tray and use parchment paper on the top to line it. Place the smaller portions of the dough on this tray. Add the whole coconut mixture to the tray in smaller portions. 

When you are done, place the tray in the freezer for around 5 minutes. This will make them firm on the outside and soft on the inside. Take it out and store it in a jar. Now, you can have them whenever you want. But make sure you store this in a cool and dry place.
