  • Some chickpeas that you have rinsed, drained or even dried already on a towel. 
  • 1 tablespoon coconut or avocado oil
  • 1 tablespoon shawarma spice blend
  • 1 tablespoon coconut sugar or maple syrup
  • ¼ tablespoon sea salt


  • ¾ cup Vegan tzatziki
  • 1 batch red pepper tabbouleh hemp
  • ½ cup kalamata or green olives 
  • 1 medium cucumber
  • ½ cup cherry tomatoes
  • 1 thinly sliced medium carrot


  • Preheat the oven at around 380 degrees Fahrenheit and set the baking sheet. 
  • Add the washed dried chickpeas into a mixing bowl along with oil, maple syrup, salt, and shawarma spice blend. Toss the bowl to combine it well. 
  • Place the prepared seasoned chickpeas on the baking sheet. Bake the chickpeas for 20-25 minutes or till the chickpeas get golden brown with a slight crisp. Remove the prepared chickpeas from the oven and set them aside. 
  • Add tabbouleh, tzatziki, tomatoes, cucumber, tomatoes, and carrots, and mix the chickpeas with vegetables. Add some lemon juice on top and garnish it with some coriander.

  • 1 pound firm tofu that is pressed and drained
  • 1 medium-sized cauliflower head
  • 2 tablespoons sesame oil
  • 1 tablespoon grated ginger
  • 3 cloves grated garlic
  • 2 diced carrots
  • ½ cup frozen peas or peas
  • ¼ cup thinly sliced green onions
  • 3 tablespoons soy sauce
  • 3 tablespoons cashews
  • Sesame seeds for garnish


  • Press and drain the tofu by wrapping tofu in paper towels and by pressing the tofu under a super heavy object
  • Take the gathered tofu and crumble it lightly in a large bowl and keep it aside. 
  • Cut the florets of cauliflower, discarding the inner hardcore. 
  • Use a food processor or a cutter to finely chop the cauliflower into rice-sized pieces. 
  • Take a large pan and heat some sesame oil in it, followed by adding grated garlic and ginger. Lightly stir them together for 30 seconds until they get golden brown and the fragrance starts. 
  • Add the carrots, cauliflower and stir it for the next 3 minutes. Stir the peas in and mix the ingredients well. 
  • Stir it often, and then add tofu, green onions, soy sauce, and cashews. 
  • Garnish the dish with sesame seeds if you love them.
