Coconut milk – 1 ½ cups

Powdered sugar – 2/3 cup

Cornstarch – 1/3 cup

Vanilla – 1 tsp

Toasted coconuts, berries or mango slices, mint leaves for garnish (optional)


Gather all the ingredients.

Take a small saucepan and put coconut milk, cornstarch, powdered sugar, and vanilla in it. Heat it over medium-high flame. Whisk it continuously as it heats, dissolving all the lumps. Bring to a simmer and then bring down the heat to medium-low.

For about 6-8 minutes, continue to cook it on medium-low heat until the coconut pudding starts to thicken.

For crust

Raisins – 50g, soaked for at least 2 hours

Sunflower seeds – 50g, soaked for at least 2 hours

Dried coconut flakes – 50g

Coconut oil – 2 tbsp

For filling

Cooked pumpkin – 1,5 cups

Coconut milk – 400 ml

Silken tofu – 200g

Agar-agar powder – 4g

Stevia powder – 4 tsp


For preparing the crust, melt the coconut oil over low flame and blend it together with sunflower seeds and raisins using a blender. Stir in the coconut flakes as well.

Transfer this crust mix into a serving dish and press the crust evenly on the bottom and the sides of the dish using a tablespoon or a spatula.

Take a saucepan and pour coconut milk in it and bring it to almost boiling point over medium-low flame. Put agar-agar and stir it for a few more minutes until the agar-agar has dissolved completely.

Blend together the silken tofu, pumpkin, coconut milk, and stevia until smooth. Pour this filling carefully onto the crust.

Refrigerate it for at least 2 hours.

Coconut milk – 1 can

Fresh fruits – 2 cups

Vanilla – 1 tsp
