Preheat the oven with a 200 ° C / 180 ° C fan. Use a small sharp knife to cut off the top of the pepper and secure the lid. Scoop the seeds with a teaspoon and remove the membrane. Place the capsicum shells on a small roaster pan with the cut side facing up. Combine rice, beans, tomato strips, zucchini, parsley, lemon zest, shallots, garlic, and broth in a large bowl. 

Divide the rice mixture into red pepper shells and gently press down until complete. Place the reserved lid on top. It rains lightly on the oil. Cover with foil. Finally, you have to bake it for 25 minutes, remove the foil, and again bake it for 15 minutes until the capsicum shell is just soft out.

Try these meatless fajitas stuffed with black beans, avocado, and pepper. To prepare the dish you only need 15 min.

To make a fajita mix, take two or three strips from each pepper color and chop them into small pieces. Place it aside. Heat the oil in an available frying pan and fry the remaining pepper strips and onions until they soften and the edges turn brown. Let it cool a little and mix with the chopped green peppers. Add garlic and simmer for 1 minute, then add spices and stir. Cook for a few more minutes until the herbs are aromatic, then add half of the lime juice to season. Leave the liquid and transfer it to a plate to keep it warm.

 Now, Put the black beans in the same pan and add the rest of the lime juice and plenty of seasoning. Stir the beans around the pan to warm them and help absorb the flavors of the fajita mix, then stir the coriander. Warm the tortillas in the microwave or low oven and wrap them to prevent them from drying out. Add fajita mix, avocado, beans, and sour cream to the tortillas so everyone can do it themselves.
