Vegan Pasta With Creamy Mushroom Sauce
- 12 ounces whole-wheat pasta (boiled with proper seasoning)
- 12 ounces oyster mushrooms (preferably)
- 2 tbsp VEGAN margarine
- 1 tbsp flour (refined)
- 1 ¼ cups soymilk/ almond milk
- 2 garlic pods, minced
- 1 tbsp parsley, chopped
- ¼ tbsp. lemon juice
- Kosher salt and fresh ground pepper, to taste
First, heat the skillet over medium flame and melt the half margarine, next put the minced garlic and diced mushrooms. Saute it for 5-7 mins and keep them aside.
Now make the white sauce. For that, but rest of the margarine and stir the flour continuously just for 1 min. Add soy milk gradually without making lumps and mix it to a smooth white sauce.
In the final stage, add mushrooms, parsley, salt, pepper, sauté for 30 secs and squeeze the lemon juice over it. Now, pour this creamy mushroom sauce over the pasta and garnish with your favorite seasonings.
