These tasty, healthy vegan soup recipes are simple and yet so very delicious. They are not only quick to make (in under 15 minutes), but are full of flavor, rich in nutrients, and just generally good for you! Most of these are vegetable-based, packed with superfoods and other great ingredients for your body and soul. Vegan Soup Recipe By Grandmother
My first two vegan soup recipes are my grandmother’s and of course, the classic casserole. This one is very simple to make and it really hits the spot. You simply cook your vegetables along with some spices (onion powder, garlic powder, black pepper, etc), a cup or two of some liquid like soy, juice, or vegetable stock, and a quarter or cup of chopped cooked onion, carrots, potatoes, or cauliflower. When preparing vegetables, always rinse them well first!

Focus On The Vegetable Medley
For my next couple of vegan soups, I am focusing on the classic favorite – the vegetable medley. This one is usually a mix of colorful vegetables like cauliflower, broccoli florets, peppers, onions, mushrooms, potatoes, etc. Usually I use coconut and hemp milk to make the creamy base for this meal, which also gives it a nice, rich taste and texture. To jazz up this classic recipe, I like to add some herbs and spices such as garlic, chili powder, oregano, Cayenne pepper, or even curry powder. The great thing about vegan soups like these is that you can change the flavor profile by adding other items into the pot – anything from fresh vegetables to dairy products.
If you’re looking for some other interesting and tasty vegan soup recipes, then I’ve got a couple of more that I’d love to share. One is a chickpea soup called “Baked Chickpeas.” It is so easy to make that I highly recommend it. You cook the chickpeas in a slightly baked tortilla shell and then add some tomato paste, nutritional yeast, chickpea flour, nutritional yeast flakes, etc. and bake it. Once it’s baked, you then add your vegan yogurt and blend it all together.
A few other vegetable soup recipes to try out are creamy vegetable soup with baked zucchini, cashew cream soup, and creamy almond soup. As you can see, soup recipes don’t have to be boring and dull. There are so many different options for everyone’s tastes, as well as low-carb and diabetic friendly meals for those on a diet.
